Howdy CSA members and happy October! While I have been enjoying the Fall weather and beautiful changing leaves that October brings, it does sadly mean that Summer CSA is coming to an end with this being the last week. Thank you for spending this summer season with us and trusting GVB to provide you with delicious produce and flowers! GVB isn’t possible without the love and support for our community and CSA members and we are blessed to get to interact with all of you! We would love to see you all in the colder months, so don’t forget to sign-up for Winter CSA. Winter CSA includes storage crop produce as well as fresh greens including; Spinach, Chard, Kale, Bok Choi, Lettuce mix, Little Gem Lettuce Heads, Mustard Greens, Arugula, Napa Cabbage, Brussels Sprouts, Green and Red Cabbage, Microgreens, Carrots, Beets, Celeriac, Parsnips, Potatoes and Watermelon & Daikon Radish, Winter Squash, Garlic and Onions. There is both a full and half share for Winter CSA running for 3 months; November, December, and January. We will also be selling produce and dried flowers and dried/fresh wreaths at the Rocky Creek market stand on Wednesdays throughout the winter as well as the Bozeman Winter Farmers Market at the Gallatin Valley Fairgrounds every Saturday. Whole Farm CSA will switch to Wednesday pick-up starting next week, October 8th. CSA boxes will be pre-packaged and stored in the cold room for the month of October as we navigate higher foot traffic from Fall Festivities. Then, starting in November, we will switch back to market style pick-up. Lastly, don’t forget that each Whole Farm CSA member receives 12 apple cider jugs as well as 4 pumpkins (of any size/variety) throughout the fall season. You will see two new columns on the sign out sheet that indicate these balances. Cider and pumpkins can be taken a few at a time or all at once! Cider freezes well for up to 6 months if you wish to enjoy all throughout the year.
CSA boxes this week debut a few new items such as delicada, celeriac root, and frisee! Celeriac root Celeriac, or celery root, is the large, knobby root of a variety of celery grown for its root, while traditional celery is the stalk variety grown for its crisp stalks and leaves. Celeriac is earthy, starchy, and has a firmer, potato-like texture, whereas celery is watery, crunchy, and has a milder flavor. Given its starchy nature, celeriac can be prepared similar to potatoes! Check out the recipes below for roasted celeriac and celeriac mash. Frisee is a type of chicory, specifically the curly endive variety, typically added to salads for its contrasting peppery flavor and texture. Most commonly used raw in salads, frisee pairs well with vinaigrettes and red meats that compliment its flavor. Check out two recipes linked below for a warm and cold frisee salad. Lastly, delicata squash is a variety of winter squash with cylindrical fruits that are cream-colored and striped in green or orange. As its name suggests, it has characteristically a delicate rind. Delicata squash is a sweet winter squash with a flavor described as nutty, mild, and similar to a cross between butternut squash and sweet potato. And yes… more tomatoes! If you are looking for more ways to use your tomatoes, I followed the recipe below and made a tomato jam that was both sweet and savory, making it a great pairing with toasts, cheese, and fruits. Additionally, the tomato jam can be canned and is shelf stable.
