Howdy CSA members! I hope you’re staying warm after the cold snap we experienced this last weekend! Despite the chilly weather, we had a great second weekend of Fall festivities. Our veggie crew has been buttoning up the fields for winter and prepping cold storage crops to transition into storage. Our flower team harvested the last of the field flowers and have been enjoying the shift to making dried bouquets. CSA bouquets are still fresh this week and next week as we use our greenhouse flowers. Don’t forget that Whole Farm CSA pick-up at Rocky Creek Farm is now on Wednesdays. Additionally, CSA boxes will be packed and held in the store room for Wednesday pickups through the month of October as we experience higher foot traffic. You will be able to enjoy market-style pick-up starting again in November. We’re still accepting turkey orders! Our turkeys are weighing right on track and we anticipate butchering a batch this week. Our turkeys are anticipated to be 18-20 lbs and are priced $7/lb with a $30, nonrefundable deposit. If you would like to claim one, there is a clipboard next to the CSA sheets where you can provide your information. Lastly, don’t forget that you receive 4 pumpkins of any size/variety with your CSA as well as 12 ciders!
CSA boxes this week includes some summer favorites such as kale, romaine, and basil as well as some Fall produce like spaghetti squash, broccoli, golden beets and onions! Spaghetti squash is a type of yellow-skinned winter squash whose flesh, when cooked, separates into long, spaghetti-like strands. If you are not a fan of the veggie-alternative to pasta, try roasting the spaghetti squash as a side dish or blending the roasted flesh to make a delicious soup! Both recipes linked below. An easy recipe that incorporate golden beets into a warm dish for this cold weather is roasted beets with feta and honey-balsamic glaze! This is my favorite way to enjoy beets outside of a salad dish or pickled form. If you’re still hanging on to some tomatoes from the previous week’s CSA, try making a marinara sauce by incorporating this week’s onions and basil! My favorite homemade marinara sauce that freezes well is linked below.
