Howdy CSA members! We hope you’re having a lovely start to the week. We’ve been harvesting like crazy this last week in both the flower fields, berry fields, and veggie fields and this week’s CSA box is proof. Not including this week, we have 5 weeks remaining for Summer CSA (with the last week being the first week of October) and Whole Farm CSA will continue to run through the end of January, coinciding with the Winter CSA timeline. Our raspberries are coming to end, so if you would like to pick some before they are gone, swing by the Rocky Creek Market Stand this week! We are accepting apples for custom cider pressing and anticipating firing up the cider press later this week.

CSA boxes this week are showcasing eggplants, heirloom tomato, celery, and sweet corn! Eggplants are part of the nightshade family, which also includes tomatoes, potatoes, and peppers. The porous cell structure of eggplant makes it perfect for soaking up spices and seasonings, similar to how tofu absorbs flavors. Eggplant is great grilled or roasted and added into salads and pastas. For a different approach, try a stuffed eggplant recipe linked below! If you’re interested in a twist on traditional corn on the cob, try Mexican street corn, recipe below! Celery leaves are edible and can be used fresh as a flavorful garnish or herb, dried and sprinkled on meats, or added to dishes like salads, soups, and stews. They offer a peppery, earthy taste, provide essential vitamins (like C and K), minerals, fiber, and antioxidants that support immune health and reduce inflammation. You can extend their life by drying the leaves and making celery salt or fresh celery basil (recipes below).
