Happy Spring Break in Bozeman week!

It has been a lovely week here at Rocky Creek! Seeding is happening in full swing on the veggie side of the farm. It is a beautiful thing to see the full circle elements of farming happening throughout the year - the smallness of a seed being planted in the spring, to it blossoming and providing beauty and nourishment that we can enjoy throughout the rest of the year, only to repeat the cycle all over again. It is truly the smallest things in life that are often the most important and awe-inspiring! We hope you are able to enjoy some of these little-big moments as spring approaches us in the next few months. :)

In your boxes this week, you will find lots of delicious greens and herbs that have been growing in our greenhouses during these wintery months. You will also find something new in your boxes this week - Indian woman dry beans! These are light and tender beans that are great in soups, salads, and anything in-between. These beans are known to cook a bit faster than other beans. When you are using your Indian woman dry beans, be sure to pick through and rinse the beans in cold water multiple times before soaking them overnight or boiling them. This will insure no bits of the bean pods/spare bits of dirt make it into your dish! These beans were another part of our Dryland project and were grown without any irrigation, Matt and Jacy have been saving the seeds for these beans since their first year of farming in 2003! You can plant these beans in early June to grow your own or eat them up.

    • For this recipe, you can use the cabbage from your box for the salad itself, and you can also use some of the spinach and garlic for components of the dressing!
