Yep, you read that right, the first cucumbers of the season are here! This week’s box brings together the fresh flavors of spring and the first taste of summer. Crisp cucumbers join a lineup of leafy greens, sweet carrots, and peppery radishes, alongside a beautifully fragrant bouquet of flowers. And don’t forget to smell that Stock, it has one of the sweetest fragrances in the garden right now!

If you’re looking for an easy way to enjoy this week’s harvest, this Spicy Asian Cucumber Salad is a delicious option.

Spicy Asian Cucumber Salad

INGREDIENTS

  • 1 large cucumber

  • 2 tsp salt

  • 1 tbsp soy sauce

  • 2 cloves minced garlic

  • 1 tbsp rice vinegar

  • 1 tbsp Chinese chili oil

  • 1 tbsp granulated sugar

  • 1 tsp sesame oil

  • 1 tsp sesame seeds

  • 2 tbsp finely sliced green onion

PREPARATION

  1. Thinly slice or cut cumbers into spirals

  2. Sprinkle salt over cucumbers and let sit for 5 minutes, this helps drain the water from the cucumbers. Rinse with cold water, the strain and set aside

  3. Combine the rest of the ingredients in a separate bowl

  4. Pour dressing over cucumbers and gently mix, enjoy!

The Market Stand will also be open for purchases on Thursdays from 12 pm to 6 pm.

This week on the farm, we planted 5,000 new strawberry plants in preparation for the you-pick season! The rainy, cool weather last weekend provided ideal conditions for these new transplants, and they’re already settling in well. We planted an ever-bearing variety, meaning they’ll produce fruit continuously throughout the season! The veg crew is busy this week planting the fall cabbages, cauliflowers, and Brussel sprouts, along with peppers, and tomatillos. Sweet corn is also being planted from transplants which is a unique aspect of our farm as it helps with the germination.

Summer camps are just around the corner, with our first session beginning on June 22nd. We still have a few sessions with spots available, and we’ve also added an additional week of Animal Camp from August 17th to 21st. Know a middle schooler who loves the outdoors and getting their hands dirty? Our Junior Farmer and Leadership Program gives 6th to 8th graders the chance to dive into farming techniques and practice their leadership skills, we are also offering scholarships for this program!
