Your boxes this week are filled with an assortment of greens. Enjoy salads and sautés.
Try this veggie-filled fried rice.
Ingredients:
6 cups cooked white rice (2 cups dried rice)
3T Olive oil/vegetable oil
1T sesame oil
2T soy sauce
1T fish sauce
1T rice wine vinegar
3 eggs
3 cloves garlic (finely chopped)
1T fresh ginger (grated)
2 small onions (diced)
2 carrots (diced)
Hakurei turnip (sliced)
Hakurei Turnip greens (chopped)
Choi Sum (chopped)
Kale (chopped)
1 scallion
sun shoots
Optional tofu or mushrooms
Note: This recipe works best with left over rice. Adjust other ingredients as needed if you are using more or less rice. If you are using fresh rice, let it cool slightly before starting the steps below.
In a small bowl mix 1 tablespoon of the olive oil, sesame oil, soy sauce, fish sauce and rice vinegar; set to the side. In another bowl crack and beat the eggs. Chop up all veggies into bite-size pieces.
Heat a large pan or wok on the stove top. Once hot, pour in 2 tablespoons of oil, along with the onion, cook for 5 minutes stirring regularly over medium heat. Add carrots, turnip, choi sum, garlic and ginger and cook for another 2 minutes. Stir in greens and mix well. After 4 minutes add the rice, mixing well. Make sure you are scraping the bottom and sides of the pan to prevent sticking. Cook for 2 minutes then pour in the sauce - continue to stir. Push rice to one side of the pan clearing space at the bottom. Pour eggs into space you made and scramble until they are mostly solidified. Mix all ingredients together and continue to cook for 5 minutes.
Serve with a scallion and sunchoke garnish. Use soy sauce and sriracha to taste.
