This week on the farm our floral team wrapped up transplanting all of our flowers into the fields. Our veggie crew is harvesting the first of early summer produce including bok choy and cucumbers. Our education team is preparing for farm camps which will begin the week of June 16th. Farm camp offers week long sessions for campers of all ages to be farmers, explorers, scientists, and artists while growing their sense of connection to the land. Each week targets a different theme and two separate age groups. For more information and registration, check out our webpage!
CSA boxes this week continue to provide spring leafy essentials such as kale, broccolini, and lettuce. The chives are exceptionally special this week as you will notice they are developing beautiful purple blossoms. These blossoms appear in late spring and early summer harvests and are edible, adding a mild onion-garlic flavor to various dishes. You can incorporate the blossoms into the same dish you are using chives for or they can be sprinkled on salads, soups, or egg dishes, used as a garnish, or incorporated into vinegars or compound butters. We have also been able to harvest the first of our cucumbers and are eager to share with you all. Cucumbers can be incorporated in a multitude of dishes, but one of my favorites for early summer is a watermelon cucumber feta salad! This salad is light and refreshing, combining several fruits and veggies that are coming to season at the same time. Check out the recipe linked below!
