Summer CSA has started! We are sending fresh produce out to all our in-town pick up locations and stocking the Rocky Creek market stand to prepare for all our Summer CSA members this week. We are also preparing for Fall festivities and are planting 7 miles of pumpkins; nearly 50 varieties of pumpkins! We co-grow our pumpkins with Headwaters Farm in Three Forks where the climate is slightly warmer and beneficial to their growth. Once they are ready to harvest, we tote them back to Rocky Creek farm where they will be dispersed in our apple orchard and pumpkin patch. Lastly, we are spending the rest of this week weeding our flower and berry beds in anticipation for the start of “u-pick” season at the end of this month. Stay tuned for an official launch date!

This week’s CSA is packed with leafy produce, guaranteed to overflow your bags and boxes. A plethora of green hughs litter CSA boxes but showcase a pop of color with pinks, reds, purples and yellows from rainbow chard, radish, lettuce mix, and flowering bok choy. One new appearance this week includes mustard greens! Mustard greens are a versatile leafy produce that add a hot, radish bite and vivid color to meals. Mustard greens can be added to salads for a earthy, tangy taste, stewed with starchy vegetables and blended for creamy soups, or simply folded into rice and stir fries for a assertive, brilliant flavor.
