Howdy CSA members! Happy last week of October and Fall Festivities here at the farm! We had a stellar Fall season and are so thankful for all the community members that we were able to provide pumpkins, tractor rides, and fresh cider to! This week is the last week of Fall market stand hours, concluding with a last day of tractor rides on Friday from 1pm-5pm. Winter market stand hours officially start on November 2nd and will run Sundays 9am-1pm and Wednesdays 12pm-6pm through the Winter and Spring. CSA pick-up will transition back to market style next week, November 5th, from 12pm-6pm. With this week being the last of Fall festivities, it is also the last week to claim your cider and pumpkins shares as part of your CSA. We are pressing our last batch of cider today, October 29th, so grab your remaining jugs before they are gone! Additionally, November 1st is the last day Winter CSA is on sale; therefore, if you have any friends or family that are interested in joining you in receiving delicious farm fresh produce each week, send them our way. Although we are buttoning up our Fall activities, we are working hard behind the scenes to prep for the winter season; including not only cold storage crop harvests, but cutting nordic trails for your enjoyment. You automatically receive a season pass for you and your family as part of your Whole Farm CSA share. Check out our Rocky Creek Nordic webpage for more information and a map of groomed trails. Lastly, thank you all for being part of our Whole Farm CSA group! We will be incorporating our Winter CSA members into next week’s newsletter, but are thankful for our community of veggie lovers that stick with us during the “in-between” seasons!

CSA boxes this week include some regular favorites with more squash, but this week we’re showcasing Kabocha Sunshine squash. Sunshine squash is a hybrid Kabocha variety known for its bright orange-red skin and sweet, nutty, and creamy orange flesh. Sunshine squash is popular for its high-quality flavor and is suitable for baking, mashing, and pies. Sunshine squash skin is edible, so no need to peel during preparation! A simple way to enjoy Kabocha squash is roasting it in the oven with butter and garlic. Check out the recipe linked below for a simple roasted squash recipe. My favorite way to enjoy savory squashes is by stuffing them! I included a stuffed sunshine squash recipe below if you’re interested. Lastly, for a sweet twist on this squash, try a Kabocha Squash Chocolate Chip bread.
