It is shaping up to be another lovely week here at the farm! New growth is beginning to happen as spring lies just around the corner. We have seeding happening for the upcoming spring planting season and new piglets squealing around in the hay barn! We also still have some dried flower wreaths and bouquets for sale in our market stand to bring some color to your homes in these wintery months. The snow this week has been wonderful and our nordic ski trails are freshly groomed! Come for a ski and check them out if you haven’t already :)

In your boxes this week, you will find some staple veggies to continue bringing some freshness to your meals this month. One of these is savoy cabbage. This type of cabbage is similar to green cabbage, but has a sweeter and milder taste. It looks a bit different, however, because its leaves and beautiful and ruffled! This type of cabbage is very versatile and can be used in a variety of dishes. Check one out for yourself in the recipes below! Another awesome green that you’ll find in your box this week is pea shoot microgreens. These greens are the sprouts of pea plants and they pack a punch because they are FILLED with fiber, protein, and Vitamin C. These microgeens can also be used in a variety of recipes, some of which may surprise you! Be sure to check out the one below. :)
