After the snow and cooler temperatures last week, we are back to spring weather. Tomatoes are going into the ground in the green house today! We also translated ranunculus in the flower greenhouse. With warmer temps we will be starting to transplant into the fields later this week as well.
Today you are receiving a variety of fresh veggies and eggs. Next week is meat week! The first carrots of the year are here – enjoy fresh carrots and radishes as well as an assortment of greens plus choice of garlic.
The bag of braising greens this week is a mix of young chard and kale. Braising greens are traditionally slow cooked to tenderize and served as a side to bbq or main another dish. Try this simple braising greens recipe:
Garlic braised greens
1/4 cup olive oil
2 cloves garlic coarsely chopped
1 large onion
1 bag braising greens
1.5 cups water or broth
salt and pepper to taste
Heat oil in a pot or dutch oven over medium heat. Put garlic and onions in the pot and season with salt and pepper. Cook, stirring occasionally until the onion is translucent. Add braising mix to the pot, stirring and letting it wilt slightly before adding more; season generously with salt. Cook, stirring often, until all of the kale is deep green and just wilted, about 3 minutes. Add 1½ cups water or chicken/veggie broth and cover pot partially with a lid. Cook until liquid is reduced by half and kale is tender, 12–15 minutes.
Serve warm with potatoes or to balance out a meatier dish.
These fresh spring braising greens don’t need to be braised to be tender! You can also sauté with oil and soy sauce or chop up and toss into a red sauce to serve on pasta.
