We hope everyone had a lovely holiday weekend! We are eager to see several changes on the farm this week including a variety of new flowers making their debut such as Sun Flowers, Sweet Peas, Corn Cockle, and Blue Flax; all making an appearance in this week’s bouquet. We are excited to open U-Pick Flowers this Saturday, July 12th. Stop by the Rocky Creek market stand from 8am - 1pm to pick a bucket of flowers to make your very own bouquets. U-Pick strawberries will continue to be available through the month any day the market stand is open (Tuesday, Thursday, and Saturday). Kid’s Camp this week is highlighting animals and teaching our 4yr - 6yr old and 1st - 5th grade campers all about domestic and wild animals here on the farm including caring for baby chicks, herding sheep and processing wool, and giving pigs a belly rub! We restocked our meat freezer with new processed pork products including plain ground pork and brats! You can also find our usual meat options including chorizo, maple sausage, Italian sausage, ground lamp, bacon, whole chickens, and variety of lamb and pork cuts.

Summer harvest is upon us! You will find several summer veggies in your CSA box this week including jalapeños and snap peas! Additional produce include several leafy greens such as Red Russian kale, butter leaf, spicy micro mix and chard as well as radish, scallions, and mint! Snap Peas are rich in fiber, vitamin A and C and folate. Snap peas can be enjoyed raw with dips, cooked in a stir fry, or roasted. Check out the recipe below for a light summer pasta salad that incorporates snap peas! Jalapeños have a plethora of uses from salsas, to roasted jalapeño poppers, to extra spice in recipes. Remove the seeds for a milder taste or include for added heat. If you are looking for something outside of the traditional use, try candied jalapeños for Cowboy Candy or a fun summer cocktail drink that includes jalapeños and mint; both recipes below! Jalapeno and Mint Mocktail:

  • 1 small jalapeño, thinly sliced (remove seeds for less heat)

  • 6–8 fresh mint leaves

  • 1–2 tsp honey or agave (optional)

  • Juice of 1 lime (about 1 oz)

  • Sparkling water (or club soda)

  • Ice

  1. Muddle: In a glass or shaker, muddle jalapeño slices, mint leaves, and honey/agave (if using) until fragrant.

  2. Add lime juice and stir (or shake with ice, then strain).

  3. Fill a glass with ice, pour the mixture over.

  4. Top with sparkling water and stir gently.

  5. Garnish with more mint and a jalapeño slice or lime wheel.

Spicy Kale and Radish Stir Fry: A sizzling stir-fry using your ingredients, customizable with tofu, eggs, or meat.

  • Radishes (sliced thin)

  • Scallions (chopped, whites and greens separated)

  • Kale (chopped, stems removed)

  • Jalapeños (thinly sliced, to taste)

  • Snap Peas (whole or halved)

  • Garlic or ginger (optional, for more flavor)

  • Soy sauce or tamari

  • Sesame oil or vegetable oil

  • Optional: tofu, eggs, or chicken

    Instructions:

    Prep all veggies: Slice radishes and jalapeños, chop kale, separate scallion whites/greens.

    Sauté aromatics: In a large pan or wok, heat oil over medium-high. Add garlic (if using), scallion whites, and jalapeños. Sauté 1 min.

    Add radishes and snap peas: Cook 2-3 minutes until they start to soften and brown slightly.

    Add kale: Toss in chopped kale. Stir-fry 2-4 minutes until wilted.

    Season: Splash with soy sauce/tamari and drizzle with sesame oil. Stir well.

    Finish: Top with scallion greens. Optional: Add scrambled egg, tofu cubes, or sliced cooked meat.

    Serve With:

  • Rice

  • Noodles

  • A fried egg on top

  • Or on its own as a spicy veggie bowl
