U-pick strawberries are here! Even with freezing temperature this last week, our strawberries survived and yielding waves of strawberries each day. Stop by the Rocky Creek farm stand for a bucket and directions to the fields to pick strawberries for $5/lb. This week our education team is running two camps; Junior Farmer and Leadership Program for 6th - 8th graders and Animal Week for 4yr - 6yr olds. The Junior Farmer and Leadership Program allows campers to dive deep into the techniques and theories of farming, and learn how to be exemplary leaders for other young campers excited to be learning on the farm. Throughout the week, junior leaders will practice their leadership skills as they lead games and activities for the littles camp happening that week on the farm. Through hands on activities, games, and creative projects, our little campers will learn how to engage with animals, both domestic and wild, during Animal Week. They will care for baby chicks, herd sheep and usetheir wool, capture butterflies and learn to give a pig a belly rub! The veggie crew is weeding parsnips and harvesting carrots and broccolini this week. All the peppers and eggplants survived the frost as well and we are anticipating tomatoes soon! Lastly, Gallatin Valley Botanical is visiting Feeder Creek Farm this week for a tour and potluck; we love supporting our fellow farmers and learning about their production.
CSA boxes this week are packed with leafy greens, herbs, and root vegetables; debuting carrots and garlic scape! Garlic scapes are the edible flower stalks that grow from hardneck garlic plants. They are harvested in late spring or early summer, usually about a month or two before the garlic bulbs are ready. Not only are they a taste addition to your meal, but harvesting the scapes helps the plant put more energy into growing larger garlic bulbs. Garlic scapes can be sautéed, cooked, or grilled much like green beans or asparagus or also used as a garnish for dishes and salads. We’ve included a recipe below for garlic scape pesto! Carrots aren’t a new vegetable to most people; however, a fun one to highlight! Try enhancing your salad with pickled carrots or adding a side dish of honey glazed roasted carrots to your meal, recipes below!
