Whole Farm CSA-Week of May 1st
Happy Cinco de Mayo everyone!
Wow, what a warm and wonderful week to be outside planting! We appreciate your patience with CSA pickup and giving us some time to get our plants in the ground while we have the weather on our side. It has been so satisfying to really get out there and feel like a farmers again. This week in flowers we planted snapdragons, ammi, stock, honeywort, bachelor buttons, forget-me-nots, lisianthums, agrostima, orach, and nigella! And this week in veggies we planted beets, chard, onions (so many kinds!), kale, collards, carrots, hakureis, lettuce (3 kinds!), arugula, spinach, and radish! However, with that warm weather there has been a considerable amount of snow melt and lots of water coming through Rocky Creek! PLEASE DRIVE SLOW when coming into the RCF market stand parking lot. As Matt said, it is a NO WAKE zone!
In other news, I am so excited about this weeks arugula. We harvested it at the perfect time—not too big, not too spicy…just right! So with that in mind, I have been flipping through some of my cookbooks and landed on this really delicious and fresh tasting salad from ‘Fresh Food Fast’ by Peter Berley. In a large bowl whisk together olive oil, 3 tablespoons of fresh lemon juice, 1 tablespoon of fresh dill (pick some up from market if you’ve used up last weeks!), 1 small garlic clove chopped up, and salt and pepper. Next add some arugula, one can of white beans drained, and one yellow bell pepper. Toss it all together and add some parmesan cheese!
